About 2 weeks before harvest, farmers build structures around the plants to shade them, leaving them almost in the dark.

After harvest, the tea leaves are quickly steamed, dried, and put into heated ovens for around 30 min for so.
After the heating process, the stems, twigs, and other unwanted parts of the leaves are removed and then ground into a powder.

Even though matcha is made from the same green tea leaf, matcha is sweeter and creamier than regular green tea.
But, it also has a grassy smell and taste to it, and you can notice this when you decide to use a lot more of the powder that you should.

In North America, we tend to be more of a coffee drinker society than tea drinking like our neighbors across the ponds.
When it comes to green tea, itʼs high in antioxidants that can help protect your cell from damage, and because of the way matcha is made it contains more antioxidants compared to it sousing the green tea.
An antioxidant in matcha, Catechins, can help lower blood pressure which is responsible for heart disease and other issues.
Catechins also seem to help with your LDL (“bad”) cholesterol and total cholesterol numbers. Thatʼs good because high levels of those can lead to heart disease, heart attack, and stroke.
Polyphenols and other antioxidants in matcha (as well as loose-leaf green tea) may help protect your cells against cancer.
But more research is needed for doctors to know if these compounds can help prevent or delay the disease.

How to make green Matcha tea with a Japanese tea ceremony chasen bamboo whisk?
- To make Matcha green tea, put half a teaspoon of powder in a cup. To get a better consistency you can use a sieve for seeding tea powder. Pour hot (175°F, not boiled) water (approximately ¼ cup), then whisk with the special tea bamboo whisk until a small amount of foam appears.
